I like to make two sauces for these wings, a light and mild blue cheese and then a spicy hot wing sauce with roasted garlic. You can make both or just one depending on your tastes.
Mama Julie's Blue Cheese Sauce
8 oz. cream cheese - if watching carbs you will probably want to use the 8 oz. blocks of cream cheese from the store as they have less carbs and starchy fillers than some of the larger tubs of cream cheese that the big box stores sell.
1/4 cup chicken broth ( or more depending on the consistency you desire )
1/4 lb. Cambozola triple cream blue cheese
1/2 cup heavy whipping cream
1/2 heaping tsp. each: onion powder
garlic powder
Trader Joe's Onion Salt
1 Knorr Homestyle stock tub - chicken flavored
Fresh ground pepper to taste, I prefer the green peppercorns.
Combine all the ingredients together in a blender or food processor. Add additional chicken broth until the desired consistency is achieved. If you accidentally thin the dressing out too much, you can use a little xanthan gum to thicken it back up again. I would use 1/4 tsp of the xanthan gum at a time, until your sauce thickens back up again to the desired consistency. Two things to always remember about xanthan gum, first it is a very powerful thickener and only small amounts should be added to your dish at a time otherwise you can easily over thicken whatever your making and secondly over time it will continue to thicken up whatever your using it in.
If you can not get your hands on Trader Joe's Onion Salt, go ahead and prepare the recipe without it and then at the end if additional salt is needed go ahead and add some in and if you have any dried chives go ahead and add 1/2 tsp. in.
This Cambozola Triple Cream Blue Cheese is my favorite blue cheese. I prefer the mild blue cheese flavor or a more intense blue cheese. The only draw back to this cheese is the price. The last time I checked at Costco it was $10.99 per pound. If you would prefer a more budget friendly blue cheese go ahead and substitute another brand. If you do use another type of blue cheese you may want to add in less to obtain a more mild blue cheese flavor.
I really like green peppercorn and this is the brand I buy and recommend. Badia is a very economical brand of herbs and spices and the product is really good. MAMA JULIE'S SPICY WING SAUCE
1 - 1 1/2 Tbsp. roasted garlic, minced fine
1 cup Frank's Red Hot Wings Sauce - Buffalo Style
1 Knorr Homestyle Stock Tub - Chicken Flavored
1 stick of butter, melted
1 cup of heavy whipping cream
In a medium sauce pan, melt the butter. Whisk in the roasted garlic and allow the flavors to bloom for several seconds. Add in the remaining ingredients and whisk everything together. Set aside and allow to cool. This sauce does not need to be served warm and in fact is better at room temperature and the next day.
Both sauces can be made ahead of time. In fact my family loves these chicken wings so much that they ask me to make them 2-3 times a week right now. I like to make a double batch of the blue cheese dressing and either a single or double batch of my hot wing sauce and have them ready to go for the week ahead. Then whenever my family wants wings all I have to do is pull out however many wings they desire, toss them in avocado oil, Lawry's garlic salt and fresh ground pepper.
I like to buy a large bag of this roasted garlic and then put it in these small freezer containers for future use. I either freeze them whole or I puree them in olive oil and freeze it that way. Either way it's great to have roasted garlic ready to go for any delicious dish you or your loved ones might want.
I toss the chicken wings in avocado oil, Lawry's garlic salt, and fresh ground pepper.
I preheat my Ninja Foodie Air fryer ( using the AIR CRISP mode ) and when it tells me to "add food" I place the wings in the crisper basket in one layer. I will allow them to cook for 10-12 minutes and then turn them over. Once turned over I air fry them for another 10-12 minutes. The time will vary depending on how dense you pack the chicken wings. If you peek a lot, which trust me is very tempting to do, you will also slow down the cook time.
I love this Ninja Foodie Air Fryer. This is actually my third air fryer and bar far my favorite.
For anyone watching carbs or anyone who is gluten free, you can fry up chicken wings with no coating and yet they will still be crispy.
Clean up is really easy, as the baskets that go inside can go directly into the dish washer. The two previous models I owned did not have this ability.
All air fryers get hot on the outside but this one is the best insulated one I have had so far.
I like to use it because it does not heat up my kitchen at all, unlike when using my oven.
I like to garnish them with green onions ( or chives ) and extra salt if needed.
