These Carne Asada or Steak Tacos are delicious however I have to say the cheese and poblano stuffing really ups the taco game a couple notches!!!
I have made these tacos both with my homemade carne asada recipe that I threw in the sous vide and I made them with pre-made marinated carne aside from the store. My favorite part of the recipe is the poblano & cheese stuffing so you decide which way you want to make them.
Roasted Poblano & Cheese Stuffing
2 cups shredded Jack Cheese
6 poblano chilies ( roasted, cleaned and chopped - see my video )
2 tsp. garlic powder
2 tsp. onion powder
1 tsp. salt
2 tsp. ground coriander
1 tsp. ground cumin
* Now I used fresh roasted and ground cumin and coriander which is much more potent than what you normally buy in the store. If you use store bought you might need to increase the amounts a little bit. Add the two spices in slowly and test along the way to see how much you want in there.
To put the tacos together, my favorite method is pan frying them with a little oil. Crispy for the win my friends. If you don't want the added oil - no problem, just lay them out on a cookie sheet and bake them in the oven.
I get my skillet hot and add in a little oil. Add in one tortilla and flip it on both sides ( see my video ) this will coat the tortilla with oil on both sides and warm it up a bit making it more pliable. Add a scoop of your cheese and poblano mix. Top with a 2nd tortilla, add another scoop of poblano cheese mixture and lightly fry until it is crispy but still pliable. Add in whatever carne asada you want to use and your favorite toppings.

sour cream
pico de gallo
more cheese ( you can never have too much cheese )
cubed avocado tossed in lime juice or guacamole
fresh lime juice
cilantro
